The 24 months of ripening in small oak barrels gives this Beaujolais Villages (Lantignié) an unprecedented and irresistible depth. The base is formed by hand-picked bunches of Gamay grapes from old vines. After a normal first fermentation, the wine goes into small oak barrels to mature for at least 24 months. To monitor the development, the wines from each barrel are tasted every few months. It is surprising to be able to observe the differences between the barrels over time, in both color and taste. The wines that pass the quality test at the end of the maturing period are mixed together, after which the wine is bottled.
